Andre’s grandmother was clearly in charge of the operation and would direct people to their different tasks. It was interesting to see a albino girl in the village. The costumes are similar to the other villages on the road. The bread from the bakery was delicious. On the table was the traditional tamale call zacahuil. It is made from coarse ground corn meal and meat and chili. What is different about the zacahuil is its size, in most of Mexico the tamales are individually wrapped, the zacahuil is a large wooden tray that is baked and the corn meal ( maza) is wrapped in a banana leaf. It is often served on a leaf also.
